Ræst is a small and intimate restaurant in the heart of Tórshavn, deeply rooted in the flavours of the Faroe Islands. The menu emphasises both local fermentation traditions and the exceptionally fresh fish and shellfish found around the islands — and the wine list follows suit.

Sommelier Karin Visth’s selection offers a strong focus on hard-to-find boutique producers, and highlights cold-climate regions like Champagne, Burgundy, Loire, and Mosel, where freshness, minerality and tension mirror the sea around the Faroe Islands.

There’s room for big-name hitters too: Like the extensive selection of Domaine Romanée-Conti and Premier Grand Cru Bordeaux. Also, Château d’Yquem is served by the glass, a rare treat that finds a match in Ræst’s langoustine taco.

The +500 entries on the wine list are ever-evolving, and also holds space for rare alpine wines from Savoie and Swiss regions, with bottles chosen for both quality, curiosity, and balance.
